You can not fully prevent what a sub decided to do however you can report it to the school. Contact the sub agency and report them. If you leave detailed sub plans you can tell the sub that the work has to be collected because it will be graded. If you have a teacher that you are close with you can have them do a pop in to check on the kids and if the work is being done.
