This was because it was the start of a new unit or because the teacher did not prepare the students well enough before hand. I would leave a note as to the receptiveness of the students, my ability to teach it or if I struggled and where the teacher needs to pick up or review, and how the classes did overall. If the sub blatantly does not follow the teachers directions, the principal's secretary (or whoever is in charge of subs) should be informed and they can block that sub from picking up days in the future.
