I have changed my mind so many times about what I want to teach because every time I had an internship, I realized that I was capable of something more. I would explain that I love challenges and would be absolutely be willing to take on any class.

Comments: This is good, but maybe not saying that you keep changing your mind would be helpful.

Comments: If I were in this situation, I would not use this solution. Even though you are stating that you would be willing to teach any class, the interviewer may have doubts in you as far as how long you would actually want to teach a specific grade level because you told him/her that you have changed your mind a ridiculous amount of times.
